I can’t land on a classy way of turning my feelings about this recipe into words, so I’ll just blurt  it out: I want to eat these fajitas everyday for the rest of my life. And I have a feeling after trying this recipe, you will too. I made slight tweaks to my Aunt Liz’s famous marinade, and swapped out my childhood chicken and steak for delightful pulled mushrooms. Can’t get down with mushrooms? TRUST ME. I have converted many a mushroom-hater with this nectar of the gods. Added bonus: this can easily be made vegan. So what are you waiting for? Grab a bib and tuck in!
