My wife’s family hails from upstate New York, where we’ve spent many holidays and where I fell in love with an unusual Thanksgiving dish: eggplant parm. It came from a local Italian restaurant, covered in foil, ready to pop in the oven, and be attacked straight out of the tray with a fork. Which got me thinking: what if I stuffed it with a little sweet potato goodness, roll it up to make it festive, and voilà — create a new tradition? 

Thus, the ‘Fancy’ Eggplant Parm Rolls were born! And now they're ready to grace your holiday tables (or whenever you’re feeling a lil’ fancy)!
