Spicy Beet “Tuna” Crispy Rice

Back in my fish-eating days, I could seriously pound some spicy tuna crispy rice. It was a signature dish at my favorite restaurant in Los Angeles, and my mouth still waters at the thought. Just when I was getting ready to say, “RIP lil’ crunchy,” I found BEETS! Yes, the most glorious substitution for tuna. Just add a little marinade, sauce, and you know it — WABAM!
