Breakfast Taco Casserole

Full disclosure: I have been making this casserole for years under the name “Christmas Morning Casserole” and for good reason — I always make this before we open gifts. It’s my secret weapon to balance out the sugar crash from all the cinnamon buns and morning rolls that I snort — I mean eat. However, after making it this time around, I couldn’t help but think of Austin-style breakfast tacos as I inhaled — I mean ate — this round of recipe testing. Is the Fresh Pea Sauce classic for breakfast tacos? No, but it adds the perfect brightness and je ne sais quoi that makes your mouth water for the next bite.
