Sesame Cucumber Noodles in Peanut Sauce

One of my fondest collegiate memories is taking my ashtanga class in downtown Charlottesville followed by a trip to my favorite dumpling window. Their dumplings were divine (obvi), but the sleeper hit was their sesame cucumber noodles. They were creamy and salty while still being refreshing. Did they have a peanut sauce? I honestly can’t remember, but that’s what this little kitchen fairy prepared for you! This meal is delicious on its own or would make a great side noodle for some pot stickers!
